Smoked Mackerel Kedgeree for The Irish Times

In 2020, I was invited by Euro-Toques Ireland to contribute a recipe to the Kitchen Cabinet series in The Irish Times.

Taking inspiration from Sally Barnes’ hot-smoked mackerel, I created a family-friendly variation on kedgeree—a versatile dish of spiced rice, smoked fish and eggs.

The Kitchen Cabinet series brought together more than 100 recipes from chefs, cooks, producers and friends of Euro-Toques Ireland. Created during the first coronavirus lockdown in March 2020, the series shared the straightforward, comforting food that contributors enjoyed cooking and eating at home.
