Fat Tomato is Anthony O’Toole’s edible garden, living pantry and evolving food project in North Wexford.
Developed slowly over many years and launched in late 2024, Fat Tomato brings together growing, making, storytelling and experience – rooted in the belief that we should grow for flavour, not yield, and build food projects that value curiosity, biodiversity and time.
Fat Tomato is:
an edible garden growing over 500 varieties of organic heritage seeds and plants
a living pantry for product development and experimentation
a biodiversity-led growing project
a one-of-a-kind honesty farm shop
a place for learning, sharing and future thinking
Over time, it will evolve into a smallholding and destination, a home for gathering, workshops and dreaming in.
